Do spirits speak all languages?
Or telepathy does not actually "support" them, instead only transmitting intention?

Not all, some do, some don't speak at all.
There was a theory on this forum that they can see information differently than we do, meaning that they see intent on different planes at the same time. So they see our thoughts in the astral at the same time as hearing and seeing us in this dimension.
But if you've ever talked with a foreigner or traveled to a different country, you'd soon find out that you can get surprisingly far with body language and sounds.
Spirits is a pretty broad term and can include a whole plethora of different creatures so it's usually good to try and narrow it down to exactly what spirit you are after, and then see if there is any information about those particular ones.

What about servitors? Do they know all languages as you?

Your servitor will know your language, since it is a creation of you. Unless you for some reason choose to create it with a different language.
