What comes to mind most for me is that the number 7 is a sign of completion / perfection. The number 3 makes me first think of Binah on the tree of life, a location I personally associate with Thoth. It is the sphere on the tree of life you enter immediately after "crossing the abyss" as many groups have called it. I know that Baphomet is often seen as a completion of the Great Work as well as a symbol of perfection.
On the off topic / subjective:
Personally I associate Baphomet with Tipharet on the Tree of Life. He is a symbol of balance and such yes, but hardly the end of the path or the completion of the Great Work. A sense of false completion, sure, but for me the numbers 3 and 7 do not reference Baphomet in really any way. For me he is associated with the number 6, the unicursal hexagram, etc.
