So I want to try Invocation and Evocation, but I don't know how and with what spirits I could try for the first time, any help?

Evocation is not something to be taken lightly, and it's not for a beginner to even attempt to practice.
Read the books Book of Ceremonial Magick By Arthur Waite, and the two books Initiation into Hermetics and Practice of Magical Evocation by Franz Bardon.
Until you master everything in these three books, stay away from evoking anything.

To start you off on invocation, learn the Lesser Banishing and Invoking Pentagram rituals. Both of those invoke four of the names of God and the four main Archangels into your circle. Learn what those rituals do and how they work and you'll be off on your way to invoking other spirits, that you may not necessarily be ready for.

No seriously. What you are asking about is a pretty advanced technique that shouldn't be attempted before you've had a lot of training.
UNLESS you have some talents that you are born with. Somebody just seem to have communicated with spirits since childhood and other rules apply to them.

But for normal people, try at least 2 years training before attempting that.
