In the christian bible it mentions that there will be new heavens/galaxies and a new earth and that we will have new bodies as well as not being able to remember past lives.

The number of galaxies is unknown, as is the shape and size of the universe (assuming it is finite at all).
500 million years ago there were about the same number of galaxies as now, but animal brains on earth had a much much smaller number of neurons.
